Ingredients
  

  • 12 corn tortilla chips
  • 4 large eggs
  • 2 cups red or green salsa (store-bought or homemade)
  • 1 cup grated cheese (like queso fresco or Monterey Jack)
  • 1/2 cup sour cream or crema
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 avocado sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions
 

  • First, take a large skillet and heat the vegetable oil over medium heat. Then, add the tortilla chips, spreading them out to cover the base of the skillet.
  • Now, pour the salsa over the chips and make sure that they are evenly coated.
  • Let the salsa simmer for 3-5 minutes until the chips soften slightly.
  • Now, create four small wells in the salsa and chip mixture and crack an egg into each well.
  • Season the eggs with salt and pepper. Cover the skillet and allow the eggs to cook for 5-7 minutes, or until they are done to your liking.
  • Sprinkle the cheese over the chilaquiles and cover again for 1-2 minutes until the cheese is melted.
  • Remove from heat and garnish with sour cream, chopped cilantro, red onion, and avocado slices.
