First, take a large skillet and heat the vegetable oil over medium heat. Then, add the tortilla chips, spreading them out to cover the base of the skillet.
Now, pour the salsa over the chips and make sure that they are evenly coated.
Let the salsa simmer for 3-5 minutes until the chips soften slightly.
Now, create four small wells in the salsa and chip mixture and crack an egg into each well.
Season the eggs with salt and pepper. Cover the skillet and allow the eggs to cook for 5-7 minutes, or until they are done to your liking.
Sprinkle the cheese over the chilaquiles and cover again for 1-2 minutes until the cheese is melted.
Remove from heat and garnish with sour cream, chopped cilantro, red onion, and avocado slices.
