First, peel the potatoes and then cut them into 1/4-inch thick sticks.
Then rinse the potato sticks with water (cold) so that excess starch can be removed. Then dry them with a clean towel.
Take a deep fryer and heat the oil.
After that, fry the potatoes in batches unless they turn golden brown and become crispy.
Then remove them from the oil and drain them on paper towels.
Sprinkle the hot fries with salt to taste.
Preheat the oven to broil.
Spread the fries on a baking sheet and sprinkle evenly with the shredded cheddar cheese.
Place the baking sheet under the broiler until the cheese is melted and bubbly, about 1-2 minutes.
Garnish with fresh parsley before serving.
