  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup gluten-free all-purpose flour

Instructions
 

  • First of all, preheat your oven to 350°F (175°C).
  • Then, combine peanut butter, granulated sugar, brown sugar, egg, vanilla, baking soda, and salt in a large bowl. Mix until smooth.
  • Gradually add the gluten-free flour, mixing until fully incorporated.
  • Form the dough into 1 inch balls and then place them on an ungreased cookie sheet.
  • Use a fork to flatten each cookie and create a crisscross pattern on top.
  • Bake for 10-12 minutes, or until the edges are lightly browned.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
