Take a large bowl and mix the gluten-free flour, sugar, yeast, and salt.
Then, add warm pineapple juice, melted butter or coconut oil, egg, and vanilla extract. Mix until a soft dough forms.
Knead the dough for 5 minutes. If it's too sticky, add a little more flour.
The dough should now be covered and allowed to rise for one hour, or until doubled in size, in a warm location.
Divide the dough into 12 equal parts and shape each into a roll.
Place rolls on a baking sheet lined with parchment paper. Cover and let them rise for 30 minutes.
Preheat the oven to 350°F (175°C).
Brush the tops of the rolls with honey for extra sweetness, if desired.
Bake for 20-25 minutes, or until golden brown.
Let cool before serving.
