Ingredients

  • 2 cups gluten-free flour blend
  • 1/4 cup sugar
  • 1 packet (2 ¼ tsp) instant yeast
  • 1/2 tsp salt
  • 3/4 cup warm pineapple juice
  • 1/4 cup melted butter or coconut oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp honey optional

Instructions

  • Take a large bowl and mix the gluten-free flour, sugar, yeast, and salt.
  • Then, add warm pineapple juice, melted butter or coconut oil, egg, and vanilla extract. Mix until a soft dough forms.
  • Knead the dough for 5 minutes. If it's too sticky, add a little more flour.
  • The dough should now be covered and allowed to rise for one hour, or until doubled in size, in a warm location.
  • Divide the dough into 12 equal parts and shape each into a roll.
  • Place rolls on a baking sheet lined with parchment paper. Cover and let them rise for 30 minutes.
  • Preheat the oven to 350°F (175°C).
  • Brush the tops of the rolls with honey for extra sweetness, if desired.
  • Bake for 20-25 minutes, or until golden brown.
  • Let cool before serving.
