Ingredients
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 pound cooked chicken breasts, shredded
4 cups chicken broth
1 cup heavy cream
1 pound potato gnocchi
3 cups fresh spinach
Salt and pepper to taste
Instructions
Grab a large pot and heat the olive oil on medium flame.
Next, add the onions, carrots, and celery and fry it quickly until the vegetables are edible.
Then add chicken and heavy cream to the pot and bring to boil.
Reduce the heat and add gnocchi. Cook until tender.
Add spinach and season with salt and pepper.
