2 pounds red potatoes, quartered
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C) and lightly grease a large baking tray.
Place the quartered potatoes in a large bowl.
Apply a drizzle of olive oil and then sprinkle minced garlic, dried rosemary, dried thyme, salt, and pepper.
Toss everything together to ensure the potatoes are well coated.
Spread the potatoes out in a single layer on the prepared baking tray.
Then place the dish in the oven and let it roast for approximately 40-45 minutes. Make sure the potatoes turn golden brown and become crispy.
Turn the potatoes halfway through the cooking time to ensure they brown evenly.
