Ingredients
  

  • 2 pounds red potatoes, quartered
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a large baking tray.
  • Place the quartered potatoes in a large bowl.
  •  Apply a drizzle of olive oil and then sprinkle minced garlic, dried rosemary, dried thyme, salt, and pepper.
  • Toss everything together to ensure the potatoes are well coated.
  • Spread the potatoes out in a single layer on the prepared baking tray.
  • Then place the dish in the oven and let it roast for approximately 40-45 minutes. Make sure the potatoes turn golden brown and become crispy.
  • Turn the potatoes halfway through the cooking time to ensure they brown evenly.
