Ingredients
  

  • 1 medium-sized cauliflower head, riced (or 4 cups frozencauliflower rice)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup frozen peas
  • 1/2 cup diced tomatoes (canned or fresh)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions
 

  • If using fresh cauliflower, pulse it in a food process or until it resembles rice grains. If using frozen cauliflower rice, ensure it's fully thawed.
  • Then, take a large skillet and heat the olive oil over medium heat.
  • Add onions and garlic and cook until they turn brown.
  • Add both bell peppers and cook until slightly softened.
  • Stir in the peas and tomatoes, then add the riced cauliflower.
  • Then sprinkle in smoked paprika, ground turmeric, cayenne pepper (if using), salt, and pepper.
  • Cook, stirring frequently, for about 10-12 minutes or until the cauliflower rice is cooked through and all the ingredients are well combined.
  • Finally, garnish with fresh parsley or cilantro before serving.
