Ingredients
  

  • 8 oz macaroni pasta
  • 1 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons agave syrup
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 carrot, shredded
  • 2 celery stalks, chopped
  • 1/4 cup red onion, finely diced
  • Salt and pepper to taste

Instructions
 

  • Start by cooking macaroni according to package instructions, then drain and rinse with cold water.
  • Then take a large bowl and whisk together vegan mayonnaise, mustard, apple cider vinegar, and agave syrup.
  • Add the cooked macaroni, bell peppers, carrot, celery, and red onion to the bowl.
  • Toss everything to combine, making sure the pasta is well coated with the dressing.
  • Finally, season with salt and pepper to taste, then cover and refrigerate for at least 2 hours or overnight.
  • Serve chilled and enjoy!
