8 oz macaroni pasta
1 cup vegan mayonnaise
1 tablespoon mustard
1 tablespoon apple cider vinegar
2 tablespoons agave syrup
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 carrot, shredded
2 celery stalks, chopped
1/4 cup red onion, finely diced
Salt and pepper to taste
Instructions
Start by cooking macaroni according to package instructions, then drain and rinse with cold water.
Then take a large bowl and whisk together vegan mayonnaise, mustard, apple cider vinegar, and agave syrup.
Add the cooked macaroni, bell peppers, carrot, celery, and red onion to the bowl.
Toss everything to combine, making sure the pasta is well coated with the dressing.
Finally, season with salt and pepper to taste, then cover and refrigerate for at least 2 hours or overnight.
Serve chilled and enjoy!
