Ingredients
  

  • 1 cup dried split peas, rinsed and drained
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 teaspoons thyme
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions
 

  • Turn the Instant Pot to the sauté function and heat the olive oil.
  • Then, add the onions, carrots, celery, and garlic and sautéfor 3-4 minutes, until the onions turn brown.
  • Now, add the split peas, vegetable broth, thyme, oregano, salt, and pepper.
  • Close the lid and set the Instant Pot to high pressure for 20 minutes.
  • Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  • Finally, open the lid and use an immersion blender to puree the soup until smooth (if you desire).
  • Adjust seasoning as needed and serve hot.
