Ingredients
  

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, drained
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions
 

  • Take a large skillet and heat the olive oil over medium heat.
  • Add the onions and garlic. Cook until turns translucent.
  • Stir in the bell pepper and cook for another 2 minutes.
  • Then add rice to the skillet and stir continuously to combine.
  • Pour in the vegetable broth and bring the mixture to a boil.
  • Reduce the heat to low and cover. 
  • Simmer for about 15 minutes, or until the rice is almost tender.
  • Mix in the diced tomatoes, black beans, smoked paprika, cumin, and coriander.
  • Continue cooking for another 5-7 minutes or until the rice is cooked through, and make sure that most of the liquid is absorbed.
  • Season with salt and pepper to taste.
  • Serve in bowls, garnished with fresh cilantro.
