Ingredients
  

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 large carrots, sliced
  • 3 potatoes, peeled and diced
  • 1 cup white rice
  • 6 cups beef broth
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 cup peas
  • 1 cup chopped green beans
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Take a large pan and heat the vegetable oil on medium flame.
  •  Brown the beef on all sides, then remove and set aside.
  • In the same pot, cook the onion and garlic until brown.
  • Add the carrots, potatoes, rice, beef broth, salt, pepper, paprika, tomato paste, and bay leaf to the pot.
  • Then return the beef to the pot and bring to a simmer.
  • Cover and reduce heat to low, cooking for 1 hour, or until the beef is tender.
  • Add the peas and green beans and cook until the vegetables are tender, approximately 10-15 minutes.
  • Stir in the parsley just before serving.
