  • 2 cups black beans, soaked overnight and drained
  • 1 cup long-grain white rice
  • 3 cups water
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro, chopped for garnish


  • To prepare, start by heating olive oil in a large pot on medium heat. Add onion, bell pepper, and garlic and cook until the veggies have softened, which should take around 5 minutes.
  • Add the cumin and oregano to the pot, stirring to combine with the vegetables.
  • Add the soaked and drained black beans to the pot and the water.
  • To prepare the mixture, bring it to a boil and then lower the heat to a minimum.
  • Allow it to simmer for approximately 2 hours or until the beans are soft and tender.
  • In a separate pot, cook the rice according to the package instructions.
  • After the beans have become tender, add salt and pepper to taste for seasoning.
  • ¬†Serve the black beans over the cooked rice, garnished with chopped fresh cilantro.
