- 2 cups black beans, soaked overnight and drained
- 1 cup long-grain white rice
- 3 cups water
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste

- To prepare, start by heating olive oil in a large pot on medium heat. Add onion, bell pepper, and garlic and cook until the veggies have softened, which should take around 5 minutes.
