Vegetable Korma Recipe | Healthy Chicken Korma Vegetables
Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon grated ginger
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chilli powder
- 1 carrot, diced
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 cup green peas
- 1 cup diced tomatoes
- 1 can (14oz) coconut milk
- Salt and pepper to taste
- Fresh coriander, for garnish
Instructions
- Take a large sized cooking pan and heat the olive oil on medium flame.
- To the pan, add onion, garlic, and ginger. Sauté until the onion turns translucent.
- First, add coriander, cumin, turmeric, and chili powder to the dish and stir until fragrant.
- Then, add all of the vegetables and diced tomatoes and mix well.
- Pour in the coconut milk, cover the pan, and let it simmer for 15-20 minutes until the veggies are tender. Lastly, add salt and pepper to taste and serve the dish warm.
- Top with fresh coriander for a flavorful garnish.
